PASTA CAPRESE.

Outside the leaves are turning color and I enjoy the last warm shafts of sunlight. Fall is here! But that doesn`t mean that I can`t bring back the summer into my kitchen!
Tomatoes, mozzarella and basil… When I say these words, what are you thinking of?
I think of Italy, of warm, sunny summer days in Italy. And that`s exactly the feeling I have when I eat this dish!
This meal is sooo easy to make and you can enjoy it warm or cold. I like it as a cold salad when we have a barbecue, but at the moment I eat it as a warm main meal.

Pasta CapresePasta Caprese
Serves 4

  • 500 g Penne
  • 4 tomatoes
  • 250 g  mozzarella
  • Olive oil
  • basil
  • salt and pepper
  1. Cook the pasta as written on the package.
  2. Cut the tomatoes and the mozzarella into cubes.
  3. When cooking time is over, add the tomatoes and mozzarella to the noodles. Then add as much olive oil and basil leaves as you like and season to taste.

Easy as I said, isn`t it? :) Gudden Appetit!
