BANANA BREAD (LOW CARB + SUGAR FREE).

banana-bread-2

Last week I looked at our fruit basket on the windowsill and saw 5 bananas that were already brown. First thought: They`re ready for the garbage can… But then, on second thought: Why don`t I use them to bake a cake?

Now you will probably say: “That`s not a life changing thought, we all bake banana bread!”
Well to be honest, I don`t like bananas and I`ve never baked banana bread before! So for me, this was a life changing thought!
I looked for some recipes and found a ton, but they all use lots of white sugar and flour. However I wanted to bake a healthy cake… So I started to experiment and the result was suuuuper delicious! (Even for someone who doesn`t like bananas, this cake was heaven!)

banana-bread

Banana Bread

  • 250g ground almonds
  • 1 tsp baking powder
  • 115g butter
  • 2 tbsp agave syrup
  • 2 eggs
  • 4-5 ripe bananas
  1. Heat the oven to 180° two-sided heat.
  2. Melt the butter in a pot.
  3. Reduce the bananas to a pulp.
  4. Now mix the ground almonds, baking powder, butter, eggs, banana mash and the agave syrup. That`s it for the dough!
  5. Take a cake tin (∼10x30cm) and put a baking sheet inside so that afterwards you can take the cake out by pulling on the baking sheet. Fill the dough into the cake tin and let it bake in the oven for about 60 minutes.

Enjoy & Gudden Appetit!

HEALTHY SUMMER SNACK : YOGURT WITH FRESH FRUITS.

Yogurt Snack

It`s all about my health this year! That`s partly because of my One Little Word, but also because I have to take care of my food intolerances and sugars. So my snacks have to be sugar free! At the beginning it was very hard to find something to eat… Today I`m happy to say that it gets easier with the time.

Lately I`ve been eating a lot of yogurt with fresh fruits. It`s done in a few minutes, it`s refreshing and it sure is healthier than a finished product!

Here`s how you do it! You need:

  • unsweetened white yogurt (I usually take the one without lactose or soya yogurt)
  • fresh fruits (like raspberries, blueberries or blackberries)

Yogurt Snack 2

Take a cup and add as many yogurt as you want. Then add the fruits.

Yogurt Snack 3

Now you just have to take a spoon and squeeze the fruits. Stir the mixture properly and there you go!

Yogurt Snack 4

Enjoy your snack!

ITALIAN SALAD.

I think this is my favorite salad I tried so far! There are a lot of ingredients, I know… But I swear, it`s done in a few minutes and it tastes deliciously! A perfect salad for a warm summer evening, like we`re having them right now.

Italian Salad

Italian Salad
Serves 2

  • 250g green salad
  • 250g cherry tomatoes
  • 100g dried tomatoes in a glass with olive oil
  • 100g artichokes in a glass with olive oil
  • 125g mozzarella
  • 2 tbsp balsamico vinegar
  • 3 tbsp pine nuts
  • 3 slices of Parma ham
  • 50g parmesan
  • 1/2 bunch of basil
  • 1 garlic clove
  • salt and pepper
  1. For the dressing: Wash the basil and peel the garlic clove. Mix 50ml oil (from the glasses) with the basil and the garlic clove in a mixer. Season to taste.
  2. Cut the cherry tomatoes, the dried tomatoes, the artichokes and the mozzarella into pieces. Roast the pine nuts in a pan without oil! Pay attention that they won`t get burned.
  3. Take a bowl and add the salad. Mix it with the cherry tomatoes, the dried tomatoes, the artichokes, the mozzarella, the pine nuts, the balsamico vinegar and the dressing. Use your hands to pull the ham apart and garnish the salad with it. At the end use a vegetable peeler to peel the parmesan.

Enjoy and Gudden Appetit!
